Apple Pancake Rings

I saw this idea on Buzzfeed and had to give it a shot, although I used my own recipe. They were delicious, easy to make, and bring your pancake batter a long way!

Ingredients:

  • ½ cup egg whites

  • 2 tbsp coconut flour (if you don’t have coconut flour you can try using more oat flour)

  • 3 tbsp oats, turned into flour (I stuck them in a coffee grinder but you can use a blender, or food processor)

  • 2 tbsp plain fat free greek yogurt

  • 3 tbsp unsweetened vanilla almond milk (or milk of choice)

  • ½ tsp baking powder

  • 2 tsp cinnamon

  • 1.5 tsp vanilla extract

  • 3 packets of stevia (You can get HERE)

  • 1 apple (I used honey crisp - they’ve my new fave)

Directions:

  1. Turn on your stove so that your pan is fully heated on medium-high heat

  2. Wash your apple and cut it horizontally, into slices

  3. Using your knife, carve out the middles of each ring

  4. Mix all ingredients in a bowl

  5. Dip a ring into the batter, coating each side

  6. Spray the pan and place the ring, cooking it for about 1.5 mins each side or until you stop hearing sizzles

Top with syrup and other fruit if desired!
