Turkey Bacon-Wrapped Egg White Cups

I filled these with spinach and ricotta and oh my - they were so delicious! These are perfect as both a snack or a meal as they're easy to pack away and save for later.
I like to make several at a time, and store them in an air-tight tuperware in the frige. When I'm ready to eat, I put them in the microwave for one minute and eat them with Ketchup and Sriacha. Spices like sriacha, and cayenne pepper, are great if you're looking to lose weight because spice can speed up your metabolism. Most food outlets on campus have sriacha, or chili flakes which are great in a sandwich, or on top of a salad. Other foods that speed up your metabolism include green tea, which also acts as an appetite suppressant as you'll feel fuller for longer.
These turkey bacon cups are low in carbs and high in protein, which adheres perfectly to my diet. As such, you can eat them at any time of the day as I normally try to eat lower carbs at night time, as I'll have less time to burn off the energy before going to sleep.
There are many adjustments you can make to this recipe, such as using regular bacon, cracking a whole egg into each muffin cup, and using different cheeses. I've also used goat cheese, which is absolutely delicious.
I incorporate turkey bacon in almost all of my dishes because it's so delicious and high in nutritional value as it has less fat than regular bacon. Click here for another easy turkey bacon recipe.

Ingredients (for 6):
6 strips of turkey bacon
1 ½ cups liquid egg whites
1 cup spinach, stemmed and sliced
3 tbsp low fat ricotta cheese
Directions:
Preheat the oven to 375
Line a muffin tray with cupcake liners and spray with non-stick spray
Fill the trays with the turkey bacon by wrapping them in a circle
Place the spinach in each one at the bottom, then ½ tbsp ricotta on top (fill with any other desire vegetables/seasonings)
Carefully pour about ¼ cup of egg whites into each mould (some may seep out from underneath but that’s okay because the cupcake liner will catch it and you can easily remove it after cooking)
Bake for 20 minutes or until the eggs are set. I broiled for a few minutes after baking for 20
Remove from oven, remove from cupcake liners and any extra egg on the outside!
