Healthy Banana Chocolate Chip Muffins/Loaf

I have tweaked this recipe so many times and I finally have perfected it! So many people loved this recipe so I’m excited to finally share it. If you try it, I really hope you enjoy - tweet me if you do!

Ingredients (for 12 muffins or 1 loaf and a few regular sizes or mini muffins):

  • 3 overripe bananas

  • 1 cup whole wheat flour

  • ¼ cup oats

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ cup organic brown sugar

  • 2.5 tbsp coconut oil

  • 3 tbsp plain fat free greek yogurt

  • 1 egg, beaten (or egg replacer)

  • 1 tbsp vanilla extract

  • 1/3 cup chocolate chips (optional)

Directions:

  1. Preheat the oven to 350

  2. Mix your dry ingredients (minus the chocolate chips)

  3. In a separate bowl, mash your bananas then add in the remaining wet ingredients)

  4. Add the wet ingredients to the dry

  5. Fold in chocolate chips

  6. Spray muffin liners or a loaf tray and evenly distribute the batter

  7. For muffins: Bake for 25 minutes or until a pick comes out clean

  8. For loaves (size as pictured): Bake for 35 minutes or until a pick comes out clean)

  9. Remove and let cool, then transfer to a wire rack till they cool completely
