Lemon Poppyseed Waffles with Lemon Ricotta

These waffles are a great way to make your breakfast feel and taste like dessert! How can you go wrong with dessert?

Ingredients:

  • ½ cup egg whites

  • 4 tbsp oats, ground into flour

  • 2 tbsp coconut flour

  • 2 tbsp plain fat free greek yogurt

  • 4 packets of stevia

  • 1 tbsp lemon juice

  • 2 tbsp lemon zest

  • 1 tsp poppyseeds

  • Unsweetened almond milk (for consistency if needed…caution: add slowly!)

  • For the ricotta: low fat ricotta with vanilla extract, lemon juice and stevia)

  • Topping: Walden Farms Sugar Free Pancake Syrup

Directions:

  1. Turn on and spray waffle iron with non stick cooking spray

  2. Mix the dry ingredients then add in the wet ones. Depending on your waffle maker, add almond milk (tbsps at a time) to adjust the consistency if needed)

  3. Cook for 2 minutes! This makes 3 waffles on a relatively small waffle iron

I ate these with fresh strawberries and Walden Farms Sugar Free Pancake Syrup
