Epic Breakfast Sandwich

This was the best breakfast I’ve ever made and it’s filled with protein, healthy fats, and deliciousness!!I made this for my friend and she absolutely loved it! I actually made two more right after because it was so good….moderation is key though, I’ll be sticking to just one breakfast sammy next time (doubtful).

Ingredients
1 egg
1 whole wheat english muffin
1 slice of turkey bacon (I used Blue Menu)
1 slice of cheese (I used allegro lactose free skim milk cheese)
2 tbsp guacamole (I used wholly guacamole snack packs)
Condiments (Honey mustard was delicious)
Chives (optional: for garnish)
Directions:
Pop your english muffin in the toaster
Fill a pan with water and let it start to boil on high. When it starts to boil, reduce heat to medium and add in a pinch of salt.
Crack your egg into a cup and slowly pour it into the water. Then take a spoon and gently nudge the whites towards the yolk. Let cook for 3 mins
Meanwhile, fry your turkey bacon on a pan sprayed with non-stick spray and flip it every few minutes until it’s at your desired crispyness, then pat down with paper towel to remove some of the grease
Remove your english muffin, pile on your toppings, and remove the poached egg from a pan with a slotted spoon, then lay atop your sandwich
