I used wonton wrappers as opposed to pastry and they came out great! The ricotta is a lighter alternative to feta, and tastes delicious when seasoned. They were easy to make and only include 4 main ingredients. Ingredients (for 10):

  • 10 wonton wrappers

  • 1 cup of baby spinach, chopped (or less)

  • 5 tbsp light ricotta

  • 3 tbsp of egg whites (or less)

  • Desired Seasoning (I used pepper, dilweed, and garlic powder

Directions:

  1. Preheat the oven to 350

  2. Line a cooking sheet and spray with non-stick spray

  3. Mix your ricotta with desired seasonings

  4. Combine with chopped spinach

  5. Dip the edges of a wonton wrapped in egg whites and lightly brush it with more egg whites

  6. Spoon around ½ tbsp of filling into a wrapper and fold in and press the corners

  7. Brush with egg whites to secure the edges and sprinkle with more seasoning

  8. Repeat for the remaining wrappers

  9. Place on baking sheet and bake for 10-13 minutes, or until the edges are brown and crispy

  10. Remove and let cool
